
Nicole Guini
Head Pastry Chef
Head Pastry Chef, Chicago native Nicole Guini, attended pastry school in Tucumán, Argentina, in 2009, where she received her Certificate in Baking and Pastry from La Escuela Patagonica de Gastronomica. After working at a handful of bakeries, including Bleeding Heart Bakery, Gerhard's Elegant European Desserts and Flirty cupcakes, she switched gears and jumped at the opportunity to oversee Chef Sarah Grueneberg’s pastry program at Spiaggia and Cafe Spiaggia. In 2015, she joined One Off Hospitality under Chef Paul Kahan, as the Pastry Chef at Blackbird and its sister restaurant Avec, for which she was awarded Pastry Chef of the Year at the Jean Banchet Awards (2019).
