Adalina Prime to Open in Chicago’s Fulton Market Summer 2025

Gold Coast’s beloved modern Italian restaurant, is expanding into one of the city’s most dynamic dining neighborhoods with a bold new concept: Adalina Prime. Set to open in summer 2025 at 360 N Green Street, this next-generation steakhouse will bring open-fire cooking, elegant design, and unmatched hospitality to Fulton Market—a neighborhood quickly becoming Chicago’s culinary epicenter.

Adalina Prime isn’t your typical steakhouse. Described as ambitious yet approachable, the new restaurant offers an all-day vibe, flame-forward dishes, and a space designed for both celebratory nights out and laid-back lunches.

At the helm is Chef Soo Ahn, acclaimed for his work at the Michelin-starred Band of Bohemia and as a standout on Top Chef Season 21. As Chef/Partner, Ahn brings his signature style—bold flavors, refined technique, and unexpected twists—to a menu built around “steak, sea, and soil.”'

Adalina Prime will be housed in Sterling Bay’s new development, covering an expansive 10,500 square feet. The space will feature:

  • A lush greenery-filled patio

  • A bright, open-air atrium

  • An exhibition kitchen visible from the dining area

  • A dramatic two-story wine cellar

  • Flexible private dining rooms for 20 to 200 guests

  • A lounge near the bar perfect for casual drop-ins

The design comes from Dunne Kozlowski, the team behind Adalina’s original space. Expect natural materials, jewel-toned velvets, marble accents, and soft lighting layered with greenery—a space that feels both luxurious and welcoming.

As the team behind Adalina brings their signature style—hospitality-first, chef-driven, and design-forward—to a new part of the city, Adalina Prime is poised to become a standout in the growing list of Fulton Market restaurants.
